Cabbage salad with dill

Yield: 4-6 servings

 

Ingredients:
1/4 head of green cabbage

1/2 a daikon or 10 red radishes

2 stalks of celery

(optional) 1/4 cup sliced red onion

3 tablespoons apple cider vinegar

3 tablespoons of chopped fresh dill

2 teaspoons dijon mustard

1/2 cup olive oil

freshly ground black pepper

 

Directions:

      1.  Thinly slice cabbage, radishes, celery, and onion. Toss together in a bowl.

      2.  In another bowl, whisk together the remaining ingredients to make the dressing.

      3.  Alternately, shake the dressing in a small jar.

      4.  Add dressing to the sliced vegetables. Season to your taste.
